Can you please recommend a book or books to help me understand the Holy Spirit more (foundations in theology / the Bible / Church Fathers / explain the Holy Spirit "as a person" (and not as a "force or action e.g. love").

Our first recommendation would be the Catechism of the Catholic Church (CCC), both regarding the Holy Spirit in particular (CCC 687ff.) and the Holy Trinity in general (CCC 232ff.).
A relatively lighter book, though still insightful, is Frank Sheed’s Theology for Beginners and (more in-depth) Theology and Sanity. For a deeper yet treatment, see the relevant sections of Father Matthias Scheeben’s Mysteries of Christianity.
